For the halloumi

4 CHARALAMBIDES CHRISTIS halloumi slices (about 350gr total)

  • 2 tbsp olive oil
  • 1 tsp turmeric powder
  • 1 tsp chili or hot paprika powder
  • Juice of ½ a lemon


For the salad

  • 400gr cherry tomatoes, cut in half
  • 1 small dry onion sliced
  • Leaves from fresh coriander or parsley, thickly cut
  • 40ml olive oil
  • 1 – 2 tbsp lemon juice

Pitta bread for serving



Place the olive oil, turmeric, chili and lemon juice into a small bowl and mix together well. Brush the mixture on the 4 large halloumi slices. Fry the halloumi in a non-stick pan for about 2 minutes on each side or until it turns golden in colour.

Place the cherry tomatoes, onion, fresh coriander or parsley, olive oil and lemon juice in a large bowl and mix.

Split the salad in portions, add one slice of cooked halloumi in each and serve with hot pitta bread.
