• ½ kg CHARALAMBIDES CHRISTIS strained yogurt
  • 3-4 large garlic cloves
  • 1 flat tbsp salt
  • 1 tbsp vinegar
  • 1 large cucumber
  • ¾ cup olive oil


Peel the garlic, cut the cloves lengthwise and remove the green in the middle of the clove. Reduce the garlic to a pulp with a garlic crusher and put it in a mortar (bowl). Add the salt and mix until it becomes uniform. Do not peel the cucumber; cut it in two and again in two, lengthwise. Using a teaspoon, scrape and remove the inside of the cucumber. Grind the “hollow” cucumbers, and if they are still moist wring the excess water out. Place the yogurt and cucumber mix in a bowl, and stir using a spoon.
